A simple recipe with a mixed culture fermentation that creates a complex beer that evolves over time. With the moderate fruit addition, I find that I get a nice balance between the wheat, funk and fruit.

SRM: 4.8

ABV: ~6.8%

IBU: ~13

OG: 1.058

FG: 1.002

Mash Eff: 65%

Ingredients

Malts

2 Row – 50%
White wheat – 50%

Hops

1.5oz Cascade @ 60 min

Yeast

WLP670 American Farmhouse Blend

Directions

Mash at 157°F for 60 minutes

Yeast

BIAB
After primary, add one pound of frozen raspberries. Age for three months. Cold crash and rack to keg.
Keg condition with organic pear juice.
