Who Are You? My name is Marcio Buffolo. I’m from Brazil. I moved to SLC three year ago to work as researcher at University of Utah. I’m biologist with masters degree in cell biology and currently I have been working with diabetes and obesity.

Do you have a homebrewing disaster you’d like to share? Nobody likes to share disaster, but I have a contamination with lacto in my Honey Ale… It was disgusting.

What is your favorite style(s) to brew? I like to brew very hard recipes, ones that challenge me in order to understand the better way to brew it. Lately, I have been brewed Pale Ales and mix beers, where I have been using Brett yeast.

What style(s) will you never brew? Lagers. (I don’t have a fridge to lager my beers)

What was the first beer you ever brewed?  How did it turn out? My first beer was a hefeweizen (Franziskaner clone recipe). It turned out super alcoholic, a lot of dead yeast (bringing a lot of diacetyl taste) and over carbonated. (Almost a disaster)

Have you ever had a homebrew mistake that turned out great? No.

What is your favorite beer recipe? I love recipes with addition of ingredients during boil. My best recipe it is my Pale Ale that even get a medal at last year’s Beehive Brew Off.

Are you a BJCP Judge?  If so, what is your rank and how long have you been judging? I’m not a BJCP Judge yet. I’m studying to get it.

Do you have a good beer judging story you’d like to share with the rest of the homebrewing world. No.

Do you have a favorite homebrew trick or gadget that you’ve found to make your beer better/brewing easier, etc? I can’t say it’s a homebrew gadget, but the refractometer helps a lot.

Describe your brew system. My brew system it is super simple. I have a 7 gallon kettle, a home depot thermal cooler with a filter attached to the faucet. I use the same kettle to heat the water and to boil the wort. I also have a chiller and glass carboys. As I said, It is super simple.

How frequently do you brew (times/month or /year)? When I have enough time, I use to brew twice a month.

What is your favorite malt?  Why? A love the pale malt. It gives us a nice color, good sugars and a great body.

What is your favorite hop? Why? All the C hops are perfect for Pale Ales. I love Cascade, Citra and Columbus.

Do you have a favorite or house yeast? What qualities do you like about that yeast? Lately I have been using yeasts with low off flavor profile. I prefer to eliminate possible off flavor in order to get clearer beers.

Do you have a good homebrew club story you’d like to share? I’m not only new here but in the beer world as well. But, being a part of a home club is the best way to gain a lot of knowledge, make friends and drink good beers. I always will remember the tips that I got from other members that result in a huge improvement in my beers.

What haven’t we asked that you would really like to answer? Yes. What is your main goal for life. And the answer is: Become a brewmaster.

If you could serve your homebrew to someone famous, who would it be and what would you give her/him? I don’t like the famous people that much. But, I wish I can put sour a beer to Einstein and  see that tongue outside, which will be a funny explanation.

What’s the most unusual ingredient you’ve ever used in a brew? At least, for me, grain of paradise it is unusual.

Do you have any pets or kids named after beer styles or ingredients? No

How many medals have you won from homebrew competitions? I have a bronze medal in the American Pale Ale in the last year’s Beehive Brew Off.

Do you brew alone, with friends or with someone you live with? Usually alone

Are you an indoor or outdoor brewer? Indoor.
